They give two hot sauces a green chile sauce (aji), which just really benefits to the palate. Another white sauce (the server could only describe as "white sauce") was also good, some sort of mayonnaise / aioli type thing. What is a homemade mayonnaise, but you can add your own spices and it is far superior to the material in jar
